The Kids Culinary Camp is intense fun for residential campers offered in One and Two week sessions,
running June 14th through August 22nd, starting Sundays and ending on Saturday. For each session,
Campers arrive between noon and 3PM on the Sunday beginning their Session. Each day during
the week, Campers explore a different area of Culinary Arts. The Friday evening before graduation,
Campers attend and participate in a Culinary Karaoke evening of fun and prizes. On Saturday,
parents, friends and family arrive at 11:45am for Graduation Ceremony and a luncheon prepared
by Campers. Campers are dismissed at 1:30pm Saturday. Each day of the one week session new
culinary skills are introduced. They include:

Our curriculum also includes valuable lessons about: nutrition and organic food sources; aquaponics
(the integrated growing of tilapia fish and micro-greens and herbs in our greenhouse); organic square
foot and container gardening; composting and vermicomposting; shitake mushroom growing; beekeeping;
and olive oil herbing and bottling. Campers have morning chores, which include picking eggs in the
henhouse, working in the greenhouse, and gardening in the on site vegetable, berry and herb gardens.
Our emphasis is on providing some carry over skills for use with their families throughout the year.

One Week Sessions include the
skills and techniques listed above.
Two Week Sessions include enhanced study of what has been
learned so far, plus in depth looks at Culinary Arts as a profession.
Campers will learn how
to pursue a career in Culinary Arts and what to expect in a livelihood as a Chef. In addition,
the two week session includes campers planning and organizing an overnight hike where they learn
outdoor cooking skills over a campfire. Campers will also have the opportunity to plan and execute a
catered function.
Our "Alumni Week" Advanced Teaching Session is open to campers who have previously attended at
least one week here at the Academy. During Alumni Week campers return to learn advanced techniques
in Culinary Arts, brunch preparations, hors d oeuvres and canapes, more teaching in international
cuisines, touring of selected restaurant kitchens, meeting chefs and visiting the New England
Culinary Institute.
